The Chef Unit Manager will manage and coordinate the culinary requirements for University Housing and Dining’s (UHD) large-scale production kitchen that supports various operations such as catering, residential, and retail. Be a visionary leader with a solution-based mindset, building strong working relationships with dining leadership and cross-functional partners. Be an industry leader in trends, standards, and operational excellence.
Manage and direct all departments of a large-scale production kitchen including commissary, hot foods, dish room, and bakery. Ensure all food items are prepared in a manner of highest quality, presentation, and as needed by the serving location. Provide leadership, coaching, and training to chef leaders, full-time, part-time, students, and temporary staff.
Responsible for managing FoodPro (food management system) and completing the following: product updates, inventory book management, invoices, product ordering, and weekly inventory analysis. Checks product inventory in all areas daily. Separates weekly production run for each department/serving line and completes daily usage reports. Manage food costs through inventory and cost of goods. Responsible for financial reporting and providing necessary data.
Provide input to leadership in menu and recipe development. Assist in developing and testing recipes for accuracy. Keep current with food and catering trends. Ensure that departmental standards for quality customer service and food quality are achieved. Assist with special events from the planning stages to the execution of the event.
Recruit, hire, train, supervise, motivate, and evaluate all unit personnel. Maintain all UHD professional software including but not limited to Workday, Time Pro, Famis. Establish and maintain positive relations with all UHD dining teams, students, staff, faculty, conference groups, and campus guests. Perform other related functions as assigned.
Maintain safety and sanitation standards. Maintain the physical plant equipment. Ensure all established policies regarding food preparation and food safety are adhered to.
Participate in planning and organization in all remodeling of the food service operation. Assist with creative vision pertaining to line layouts, equipment needs, station displays, and service.
Bachelor’s degree in business, hotel and restaurant management, nutrition, or other related field.
At least 4 years of supervisory experience in a chef capacity in a large-scale food preparation or service operation.
Use of standard and special equipment used by the food service unit.
Ability to complete and maintain University Housing and Dining Food Safety Training and/or ServSafe.
Relevant education and experience may be substituted as appropriate.
5 or more years of experience managing a large-scale production kitchen.
1 or more years of experience using a computer menu/inventory management system like FoodPro or Chef-Tec.
2 years of experience developing menus and recipes.
Experience with preparing and executing catering events.
Experience in and knowledge of all aspects of proper sanitation, food storage, and kitchen safety.
Experience working with food allergies and knowledge of food allergies.
Advanced culinary degree from an accredited program.
Hold a current ServSafe Certificate.
Hold a current ServSafe Allergen Certificate.
Experience in training, coaching, directing, and developing a large culinary staff.
Experience in managing and evaluating staff performance.
Current Certified Executive Chef (CEC).
Demonstrated excellent interpersonal communication skills and professional demeanor.
$65,000+ depending on qualifications
